On October 30th I began the process of making limoncello. Forty days later, on December 10th, it was time to move on to the next step.

The second phase was really very simple. All that was required was that I make ten cups of a simple sugar syrup and then add it to the existing mixture of zest and vodka along with yet another two fifths of 100 proof vodka. Here is the result: over 1.5 gallons of lemony sludge. I’ll spare you the up close picture as it’s far from appetizing.

Now the concoction gets to hide in my closet for another forty days. At the end of that time the real fun begins as I strain out the zest and bottle the liqueur. The momentous day will be January 18th. Two days later Guy and Megan arrive from Michigan and will get to pass judgement on the brew.
